LOADED TURKEY NACHOS
Makes two servings.
All ingredients purchased @ Trader Joe's.
INGREDIENTS: LEAN & SPICY TURKEY MEAT
Cooking oil spray
½ cup diced onion
8 oz. 99%-lean ground turkey breast
½ can (7.25 oz.) Trader Joe’s Organic Tomatoes (Diced & No Salt Added)
½ can (7.25 oz.) Trader Joe's Organic Black Beans
¼ teaspoon ground cumin
¼ teaspoon chili powder
¼ teaspoon dried oregano
OPTIONAL: ¼ teaspoon salt & pepper to your taste
32 Organic Blue Corn Tortilla Chips
½ cup Lite Shredded 3 Cheese Blend
½ cup Pico De Gallo Salsa or 1 tomato, diced
1 green bell pepper, diced
2 tablespoons nonfat Greek yogurt
DIRECTIONS: LEAN & SPICY TURKEY MEAT
Spray the pan with oil & preheat on medium-high.
Sauté the diced onions for 2-3 minutes.
Add the turkey and spices: cumin, chili powder, oregano, salt & pepper.
Break up the meat with a wooden spoon and heat until cooked through, about 5-8 minutes.
Add the tomatoes, cover, and simmer three more minutes.
Add the beans, stir, and continue to cook until all ingredients are warmed through, about 2-3 minutes.
Preheat the oven or toaster oven to 400°F.
Line a pan with foil & spray lightly with oil. Spread the chips evenly on pan.
On top of the chips, arrange the meat mixture, half the tomatoes, half the bell peppers & all of the cheese.
Bake 10-12 minutes or until cheese has melted.
Add yogurt & the remaining tomatoes & bell peppers.
You can add additional FRESH garnish, such as cilantro, avocado or jalapeno. Enjoy!
