JACKFRUIT TACOS WITH SIDE SALAD
Makes 2 servings
All ingredients purchased @ Trader Joe's
2 Vegan Jackfruit Cakes*
¼ bag organic shredded green & red cabbage
¼ bag broccoli slaw
¼ cup pico de gallo salsa
2 corn tortillas
¼ avocado, sliced
black pepper, to taste
Heat the jackfruit cakes as instructed on the box.
Meanwhile, combine the cabbage, broccoli slaw, salsa and lime in a small bowl and set aside.
When the cakes are ready, shred with a fork, or cut into small pieces.
Stir the jackfruit pieces into the cabbage mixture.
Heat the tortillas in the microwave or on the stovetop.
Place a couple spoonfuls of jackfruit-cabbage mix on each tortilla and top with a slice of avocado.
Enjoy the remaining jackfruit-cabbage mix & any remaining avocado as a side salad with the tacos.
