It makes a delicious dinner, but you can also pack it for lunch.

CHICKEN ASPARAGUS PESTO PASTA

Makes 2 servings

All ingredients purchased @ Trader Joe's

INGREDIENTS:

  • 1 cup dry brown rice quinoa fusilli pasta

  • oil spray

  • 1 pack Asparagus Sauté

  • 6 oz. grilled chicken strips, chopped

  • ¼ cup Vegan Kale, Cashew & Basil Pesto

  • optional: ¼ cup California sun-dried tomatoes

  • optional: 4 teaspoons grated Parmesan cheese

DIRECTIONS:

  1. Cook the pasta according to package directions and drain.

  2. While pasta is cooking, spray a pan with oil. Then, sauté the asparagus pack over medium heat for five minutes.

  3. Stir constantly to prevent burning.

  4. Reduce heat, add the chicken & pesto, put the lid on and cook until all ingredients are warm (about five more minutes).

  5. Turn off the heat, add the sun-dried tomatoes & pasta and stir well.

  6. Divide the meal in half.

  7. When ready to eat, sprinkle two teaspoons cheese on top of each serving.
