This pasta dish is flavorful and filling and can be prepared in about 15 minutes!
It makes a delicious dinner, but you can also pack it for lunch.

CHICKEN ASPARAGUS PESTO PASTA
Makes 2 servings
All ingredients purchased @ Trader Joe's
1 cup dry brown rice quinoa fusilli pasta
1 pack Asparagus Sauté
6 oz. grilled chicken strips, chopped
¼ cup Vegan Kale, Cashew & Basil Pesto
optional: ¼ cup California sun-dried tomatoes
optional: 4 teaspoons grated Parmesan cheese
Cook the pasta according to package directions and drain.
While pasta is cooking, spray a pan with oil. Then, sauté the asparagus pack over medium heat for five minutes.
Stir constantly to prevent burning.
Reduce heat, add the chicken & pesto, put the lid on and cook until all ingredients are warm (about five more minutes).
Turn off the heat, add the sun-dried tomatoes & pasta and stir well.
Divide the meal in half.
When ready to eat, sprinkle two teaspoons cheese on top of each serving.
