Trader Joe’s Misto Alla Griglia is one of our favorite frozen veggie mixes. The grilled vegetables are marinated in oil, vinegar, herbs & spices, giving it a rich, savory flavor.

When combined with the goat cheese in this recipe, the marinade spreads out beyond the vegetables, creating a nice subtle dressing for the dish. No other sauce necessary!

We also love that this product is so versatile. We use it in sandwiches, pizzas, pastas, and, of course, stir-fries like this one.

CREAMY CHICKEN & VEGETABLE STIR-FRY

Makes 2 servings

All ingredients purchased @ Trader Joe's

INGREDIENTS:

  • 1 cup (½ pouch) frozen brown rice

  • ½ bag sliced crimini mushrooms

  • ½ package Misto Alla Griglia, cut into smaller pieces

  • 6 oz. (1/2 package) Grilled Chicken Strips, diced

    • Vegetarian Sub: 1 cup beans or 8 oz. tofu

  • 2 oz. goat cheese

DIRECTIONS:

  1. Heat the rice as directed on the package.

  2. Combine the mushrooms, Misto Alla Griglia & chicken in a sauté pan. (No oil necessary since the vegetables are marinated in oil.)

  3. Sauté, covered, for five minutes over medium heat.

  4. Add the cheese and continue to cook an additional 1-2 minutes with the lid on.

  5. Combine the rice and the chicken-vegetable mixture.

  6. Divide the meal onto two plates and enjoy!
