BROCCOLI & CAULIFLOWER STIR-FRY WITH TURKEY

Makes 2 servings

All ingredients purchased @ Trader Joe's

INGREDIENTS:

  • 1 Broccoli & Cauliflower Sauté Kit

  • oil spray

  • ½ jar Fire Roasted Red Peppers, diced

  • 8 slices Oven Roasted Turkey Breast

    • Vegetarian Sub: 1 cup beans or 8 oz. tofu

DIRECTIONS:

  1. Open the kit and remove the packets of croutons, walnuts & vinaigrette.

  2. Spray a pan with oil.

  3. Add the veggies & sauté, covered, three minutes on medium-high.

  4. Add the roasted peppers, diced turkey, nuts, and vinaigrette. (You may not need the full packet of vinaigrette. We used 1/2 the pack and saved the rest for another salad.)

  5. Heat another 1-2 minutes on medium.

  6. When done, divide into two servings.

  7. Optional: when ready to eat, add ½ pack croutons per serving.
