This delicious chicken bowl takes just ten minutes to make, but tastes like it took all day!

 

THAI GREEN CURRY CHICKEN BOWL

Makes 2 servings.

All ingredients purchased @ Trader Joe's.

 

INGREDIENTS:

  • 1 cup cooked quinoa

Simplify: Use ½ pouch Trader Joe's Organic Cooked Quinoa (frozen section)

  • oil spray

  • ¾ bag broccoli slaw

  • 6 oz. grilled chicken

Simplify: Use Trader Joe's Grilled Chicken Strips (prepared foods section)

  • ¼ cup Thai Green Curry Simmer Sauce

 

DIRECTIONS:

  1. Heat the quinoa as instructed on the package.

  2. Meanwhile, sauté the broccoli slaw over medium heat for 2-3 minutes. 

  3. Add the chicken & the sauce. Cook for 2-3 minutes or until all the ingredients are warm.

  4. Combine the rice with the chicken-vegetable mixture.

  5. Divide the meal in half & enjoy!
