Makes 2 servings (Main Dish)

All ingredients purchased @ Trader Joe's


  • 1 pack Healthy 8 Chopped Veggie Mix

  • 1 jar Fire Roasted Red Peppers, drained and diced

  • 1 avocado, diced

  • ½ cup Carrot Ginger Miso Salad Dressing

  • If making as a main dish, include 6 oz. of your favorite protein: chicken, shrimp, salmon, turkey, edamame, cashews, etc.


1) Pour the Chopped Veggie Mix into a large salad bowl.

2) Drain the jar of peppers, dice them, and add to the bowl.

3) Dice the avocado & add to the bowl.

4) Add the salad dressing and optional protein. Then simply toss and enjoy!
