All ingredients purchased @ Trader Joe's


  • 4 oz. Yellow Lentil & Brown Rice Spaghetti

  • 6 oz. grilled chicken strips, chopped

  • 1 cup sugar plum tomatoes

  • 1 cup baby spinach, roughly chopped

  • ¼ cup Spicy Peanut Vinaigrette

  • Optional: 1/8 teaspoon red pepper flakes


1) Cook pasta according to package instructions.

2) Meanwhile, spray a pan with oil and sauté the chicken, tomatoes and spinach on low heat until the tomatoes start to burst and release their juices (about five minutes).

3) Add the cooked pasta and the peanut vinaigrette. Cook an additional two minutes.

4) Season with red pepper flakes if desired. Enjoy!
