We love discovering Trader Joe’s veggie kits, and we recently found a new favorite! The Brussels Sprouts Sauté Kit includes chopped hazelnuts, shaved Parmesan cheese, and a lemon vinaigrette.

It’s quite flavorful on its own, but we’ve added an extra punch of sweet & sour with baby beets & pomegranate seeds. Not only is it delicious, but this combination is a nutritional powerhouse!

Brussels sprouts & pomegranate seeds are both extremely high in vitamins K & C. Beets are packed with a variety of nutrients, including potassium & iron. All three are high in fiber.

This recipe is simple enough for even a novice cook to prepare in 20 minutes, and delicious enough to impress your friends at your next dinner party!

ROASTED BRUSSELS SPROUTS WITH BABY BEETS & POMEGRANATE SEEDS

Makes 2 servings.

All ingredients purchased @ Trader Joe's.

 

INGREDIENTS:

  • 1 Brussels Sprouts Sauté Kit (includes hazelnuts, Parmesan cheese & vinaigrette)

  • oil spray

  • 1 pack Steamed & Peeled Baby Beets, cut into cubes

  • ½ cup pomegranate seeds

 

DIRECTIONS:

1) Preheat oven or toaster oven to 425°.

2) Line a baking sheet with aluminum foil.

3) Pour Brussels sprouts onto the baking sheet and spread out into a single layer.

4) Spray lightly with oil.

5) Roast for 10-15 minutes or until tender-crisp.

6) Add the beets and roast another two minutes.

7) Remove from oven, add half of the vinaigrette and gently toss. (You can save the other half of the dressing for another dish!)

8) Add pomegranate seeds, hazelnuts and Parmesan cheese. Enjoy!

*For a complete meal: add your choice of protein.

*For a side dish: divide into four equal portions.
