This simple & versatile recipe is perfect for prepping your protein over the weekend. Use the chicken on top of a salad, pair it with brown rice & veggies or make your favorite tacos. The options are endless!
Cilantro Lime Chicken
12 oz. chicken tenders or chicken breast
2 tablespoons olive oil
1 lime, juiced
2 cloves garlic, minced
2 tablespoons cilantro, chopped
sprinkle of salt
ground pepper, to taste
Trim fat off the chicken. To cook faster, cut chicken in half by placing one hand flat on top of the chicken breast & press down lightly. With your other hand slice through the chicken with a sharp knife.
Place all ingredients in a Ziploc bag or large ceramic dish.
Mix well and store in refrigerator 1-2 hours.
Spray pan or grill and then pre-heat.
Cook the chicken 6-8 minutes per side, until juices run clear and chicken is no longer pink.
