Trader Joe’s carries a variety of edamame, including shelled and unshelled. In addition to the delicious flavor, edamame is a good source of protein and is rich in fiber, antioxidants and vitamin K.
This recipe makes a great afternoon snack or appetizer!
CHILI LIME GARLIC EDAMAME
Makes 2 servings
All ingredients purchased @ Trader Joe's
1 cube crushed garlic
½ pack edamame (in pod) - thawed & patted dry
4 cucumbers, sliced
¼ teaspoon red chili pepper (if you don’t like spicy food, swap it with Everything but the Bagel Sesame Seasoning Blend)
juice of ½ lime
Spray a pan with oil and heat the garlic for one minute on medium high.
Add the edamame, chili lime pepper & lime juice.
Continue to cook, stirring frequently, about 3-5 minutes.
Remove from heat & let cool.
Combine with cucumbers and toss well.
Optional: Sprinkle additional chili lime pepper on the cucumbers.
TIP: Don’t eat the edamame pod, just the beans inside, which should easily pop out. To get the chili-lime flavor, bring the pod to your mouth and then squeeze or bite to release the beans.
