Beets are rich in color and rich in nutrients. They provide a bit of almost all our essential vitamins & minerals. Plus, they’re full of fiber, low in fat and low in calories.

With egg whites providing the protein, this recipe makes a hearty breakfast. And if you use Trader Joe’s Frozen Beet Chunks, it’s also quick & easy.

If you don’t like beets, this recipe will make you a convert! The two flavors of beet & goat cheese come together beautifully. If you have extra time, you can roast the beets in advance and add basil for a flavor boost.

Makes 1 serving

All ingredients purchased @ Trader Joe's


  • oil spray

  • 1 cup Beet Chunks (Frozen Section), defrost and dice into small pieces

  • ½ cup egg whites

  • sprinkle Everything but the Bagel Sesame Seasoning Blend

  • 0.5 oz. (one thin slice) goat cheese 


1) Spray small skillet with oil.

2) Sauté beets for two minutes on medium.

3) Add egg whites and cook another 2-3 minutes.

4) Sprinkle the seasoning and stir frequently until egg whites are cooked through.

5) Remove from heat and crumble the goat cheese over the top.

*For a Complete Meal: Serve with toast, tortilla, pita or even ½ cup of brown rice.
