Beets are rich in color and rich in nutrients. They provide a bit of almost all our essential vitamins & minerals. Plus, they’re full of fiber, low in fat and low in calories.
With egg whites providing the protein, this recipe makes a hearty breakfast. And if you use Trader Joe’s Frozen Beet Chunks, it’s also quick & easy.
If you don’t like beets, this recipe will make you a convert! The two flavors of beet & goat cheese come together beautifully. If you have extra time, you can roast the beets in advance and add basil for a flavor boost.
BEET & GOAT CHEESE EGG WHITE OMELET
Makes 1 serving
All ingredients purchased @ Trader Joe's
½ cup egg whites
sprinkle Everything but the Bagel Sesame Seasoning Blend
1 oz. goat cheese
1 cup Beet Chunks (Frozen Section), defrost and slice
Spray small skillet with oil.
Add the beets, cover the pan, and cook over medium heat for 3-5 minutes until beets are defrosted.
Remove beets from pan and set aside.
Spray the pan again and add the egg whites. Cook for 2-3 minutes on medium.
Sprinkle the seasoning and cover with lid to help eggs cook evenly (1-2 minutes).
When egg whites are cooked through, fold in half and place on a plate.
Top with the beets and goat cheese.
