Low in fat, high in fiber, and full of oxygen-carrying iron, we love this as a vegetarian-friendly protein option.

BEAN, CHEESE & AVOCADO WRAP

Makes 1 serving.

All ingredients purchased @ Trader Joe's.

 

INGREDIENTS:

  • 1 Organic Olive Oil Whole Wheat Tortilla

  • ¼ cup Refried Pinto Beans, Salsa Style

  • ¼ avocado, sliced

  • 2 tablespoons Pico-De-Gallo Salsa

  • handful of spinach

  • handful of broccoli slaw

  • 1 Persian cucumber, sliced

  • 2 tablespoons Light Shredded 3 Cheese Blend

 

DIRECTIONS:

  1. Optional: Heat the tortilla if desired.

  2. Spread beans on the tortilla.

  3. Layer the rest of the ingredients.

  4. Fold the tortilla into a wrap & enjoy!

 

Packing Tip: To avoid a soggy wrap. Pack the tortilla in a zip-lock bag and the other ingredients in a small container. When ready to eat, assemble your wrap.
